GF Oatmeal Cookies
These are by far the best oatmeal cookie recipe I’ve ever tried—including during my pre-gf life—and my family completely agrees. It’s honestly impossible to tell that regular flour isn’t used.
3/4 cup butter, at room temperature
1 cup packed brown sugar
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs
2 cups gluten-free flour blend
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 teaspoon xanthan gum
2 cups oats
1 cup craisins or chocolate chips (optional)*
Preheat the oven to 375 deg F.
With a mixer, cream together the butter, sugars, and vanilla, until fluffy. Add the eggs and mix until incorporated.
In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and xanthan gum. Add to the wet ingredients and stir well until incorporated.
Stir in the oats and craisins or chocolate, if desired. By this point the dough will be fairly thick, so if your mixer is working too hard, mix in the oats and craisins by hand.
Using a cookie scoop or spoon, drop a good-sized glop of dough on an ungreased cookie sheet, about 2 inches apart. Baked 10–12 minutes, until lightly brown and the edges crispy. Let cool for a few minutes on the cookie sheet, then transfer to a wire rack to cool completely.
Yields 3 dozen cookies.
*Raisins are gross, but use them if you must. ;)
